I am thrilled to explore the world of nougat! What exactly is nougat? Nougat is a delightful blend of whipped egg whites, honey, and/or sugar, sometimes enhanced with spices and flavors. This sweet treat can vary in texture, ranging from soft and fluffy to brittle and crunchy. Let’s dive into its fascinating variations and origins.
White nougat is known for its soft and chewy texture. It combines egg whites with sugar and honey, creating a light and airy confection. Brown nougat, on the other hand, is brittle and crunchy. It does not contain egg whites, which contributes to its firmer texture.
Nougat's deliciousness originally hails from the Middle East. Dating back to the 8th century, it is known as "Gaz" in this region. Gaz is an aerated, chewy candy often made with the sap of the Astragalus plant. Mann Al Sama, translated as “Manna from Heaven,” is a version of nougat featuring pistachios or almonds, spices, and rose water. This variety offers a unique and aromatic flavor profile.
Europeans have embraced and adapted nougat in various delightful ways. French nougat, known as Montélimar, is a variation similar to Mann Al Sama, featuring white nougat made with honey, almonds, and pistachios, creating a rich and nutty treat. In Italy, nougat took on a different flavor path. Known as Torrone Morbido, it combines honey and almonds with citrus notes. Torrone can range in texture from soft to hard, offering a versatile flavor experience. Spanish Turrón Blando adds a toasted almond paste, creating a buttery texture. The Greek version, known as Mandolato, features honey, almonds, citrus zest, and vanilla. Although made year-round, many of these different styles of nougat are enjoyed mostly during the holidays.

Mann Al  Sama

Mann Al Sama, translating to “manna from heaven” in Arabic, invites an exploration into the rich tapestry of Iraqi culinary history. This sweet delicacy draws inspiration from biblical and Quranic traditions, referencing the divine food, manna, once bestowed by God. In ancient times, the Israelites depended on this miraculous sustenance during their desert wanderings. A unique seed with a honey wafer flavor appears as a resin on trees in northern Iraq each morning. This natural sap, originating from oak and tamarisk trees, evolved into a Jewish culinary specialty in Baghdad, transforming into a delectable confection over the years. This treat has evolved into a modern delicacy, affectionately known in Iraq as “Iraqi Mann Wa Salwa,” crafted with genuine manna resin. Celebrated as a unifying symbol among various Iraqi communities, the contemporary approach to crafting this treat involves a modern recipe, substituting traditional manna resin with honey.
Our version of Mann al Sama offers an exciting adventure in taste. The crafting of the white nougat base promises an exciting process, infused with the exotic allure of cardamom, the fragrant whisper of rose water, and the rich, nutty crunch of pistachios. These incredible ingredients elevate the nougat to a new level of delightful flavor, offering an authentically traditional taste that is simply irresistible.
